Insects swarm menu at London bug-based restaurant.
While it may look like any other restaurant on the outside, London’s Yum Bug, as the name suggests, offers a rather unusual culinary experience for the British capital — it claims to be “the world’s first bug-based small plates restaurant.” The Yum Bug company, which makes edible insect products, opened its permanent eatery in February with the goal of shifting perceptions about eating insects
The co-founder Leo Taylor granted an interview to AFP he said
“we are actually the world first bug based small plate restaurant, everything from the butter to the dessert contains insect, and obviously all the meat ingredients are cricket, people are often quite surprised at how meaty insects are but they are meat. we are not having to do much wizardry to keep it very meaty.
you’ve got 50% more protein in our mince compared to supermarket beef meat and whole crickets have got more iron than spinach more calcium than milk, more potassium than bananas , more b12 than red meat, the list keeps going so they are an incredible super food.”
Some customers described the cricket dish as a mix between meat and mushroom “it doesn’t feel like your eating cricket”  she said and it has a good texture
They are considered climate friendly food production and requires less space for insect farming which reduces deforestation and emissions from livestock etc. The edible industry is a growing sector set to increase by almost 50% between 2023 and 2032
